In an industry based upon service and hospitality, reputations and careers depend upon the customer’s good will. Food-borne illnesses fall into two categories, intoxicant and infections. The food preparation process covers the sanitation process from the beginning, using properly sterile utensils, food storage, etc. Most city or state agencies require some sort of certification to operate.
