Cheese!

The smells, the look, the colors and shapes. Cheese is one of those things for me that could be used as currency. At my house we eat a lot of cheese!

We all know that calcium is good for strong bones, but did you also know research indicates that enjoying 3 servings of milk, cheese or yogurt each day, as part of a reduced-calorie weight loss plan can help adults achieve better results, when it comes to trimming the waistline, than just cutting calories and consuming little or no dairy.

Cheese consists of proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. It is produced by coagulation of the milk protein casein. Typically, the milk is acidified and addition of the enzyme rennet causes coagulation. The solids are separated and pressed into final form.

Categories of cheese include;

* fresh
* whey
* pasta filata
* semi-soft
* semi-firm
* hard
* double and triple cream
* soft-ripened
* blue vein
* goat or sheep
* sharp
* processed

There are so many different cheeses from all around the world. it is my goal to sample them all.
