1 large can diced stewed tomatoes with juice
¼ cup minced garlic
1 cup sliced celery
1 cup carrots
1 large zucchini
1 cup sliced mushrooms
1 tsp cayenne pepper
1 tsp oregano
1 tsp basil
¼ cup parsley
½ tsp salt
½ tsp pepper
¼ celery salt
¼ tsp tarragon
1 1/2 diced onion
4 cups chicken stock
2 large peeled potatoes, diced
In a large pot, sweat garlic and onions together.
Add all veggies, cook for 1 min. add tomatoes and juice. Add chicken stock
Add spices. Cook on med high heat for about 1 hour. If soup gets to thick, add water as needed.
