When I was a kid, my mom used to make the best mini pizzas. I did not know how she did it but I loved them! Eventually I figured out her method and made them for myself as an adult and now I make them for my family. These are so easy to make and getting the kids involved is such a great thing to do. These days due to my health I am Gluten Free for the most part…(I do slip up).
I found these great gluten free English muffins made by Food For Life. They taste great and work really well for these little pizzas. You can add whatever toppings you want, which is fun for kids. I usually have small bowls with topping choices for them to choose from. Below is the recipe for plain cheese, but feel free to add pepperoni, mushrooms, olives, peppers, spinach, sausage, tomatoes, onions, ham, pineapple, and the options go on and on.
6 English muffins, split in half
2 cups Mozzarella cheese
1 1/2 cups pizza sauce
4 Tsp Italian seasonings
On a cookie sheet place muffins on sheet. use foil for easy clean up! Next spread the sauce onto the muffins. Next add your desired amount of cheese and finish with Italian seasonings on top. Then you can add whatever toppings you may want. Plain cheese is GREAT too!
Bake at 350F for 10-12 min. Crust should be a bit crunchy, and cheese a light golden brown. (or just bubbly if you are like my husband and considers brown black)

My kids love this recipe, it takes only a few minutes to fix and they always are excited to help – especially the 10 year old. This has become our fall back meal when we don’t want to spend a lot of time in the kitchen and more time outside.
