Junk Salad

First let me explain how this came to be. About 11 years ago when I met my husband we really had no money, but we liked to eat and liked to eat healthy. We would go to the store or farmers market or local farms and buy veggies of all types and make what we call “Junk Salad”.

There is no recipe for this. It is made by using what you have on hand. Sometimes we used lettuce and sometimes we did not have any. We would chop celery, onion, broccoli, peas, carrots, zucchini, tomatoes, deli meats, cheese, nuts, crackers, day old bread etc. We would chop and then toss all the ingredients together and we used whatever dressing we had.

I know this does not sound gourmet or fancy but we had this often and still do! The idea comes from using what you have on hand to create no waste!

  4. I love this idea. It seems like a few days before I need to go to the grocery our house has nothing copmlete in it for a meal so this will be perfect so nothing goes to waste.

    With the bread in it, I guess you could say it is a Panzanella. I think people get too caught up in what it “gourmet”. If it has good ingredients and tastes good… it is good. Period.

  13. I like your “no waste” mentality, this is a great idea. I do something similar. A couple times a month I will take whatever is nearing its end. Then use it as a personal chef’s challenge to create something gourmet out of what is left.

    your right, its really about cleaning the fridge before it goes bad. its really bad to waste food right?

  19. Actually, if you look at it, this is a brilliant idea. This is proof that you dont have to have lots of money to maintain a healthy diet. i also do this at home, i just dont call it junk salad. i call it “salad” lol. Anyway, the point is be resourceful.
