Leftover Turkey Sandwich Spread

This is definitely one of those “not measured” recipes. Next time I mix some up I’ll try to pay attention to proportions for those of you that like to start with a known thing. But I use basically the same mix of ingredients for any leftover meat: turkey, chicken, roast beef, etc.

Chopped turkey or chicken
mayonnaise to taste
chopped dill pickles to taste
a bit of chopped onion (optional)
chopped celery if you like a lot of crunch (optional)
salt and pepper to taste

Mix it all up and spread on the bread of your choice. Top with some leftover cranberry relish or jelly if you like.

This recipe reminds me of the turkey salad my mom would make from leftover turkey when I was a kid.
