Penne with Spring Vegetables

Ingredients

1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
1 (8 ounce) package sugar snap peas, trimmed
1 (8 ounce) package dry penne pasta
3 tablespoons olive oil
1/2 cup grated Parmesan cheese
salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add asparagus, and cook for 2 minutes. Add peas, and cook for 2 more minutes. Transfer to a large bowl; set aside. Add pasta to boiling water, and cook for 8 to 10 minutes or until al dente; drain.
Place pasta in the bowl with asparagus and peas. Toss with olive oil, Parmesan, salt and pepper.

    Is there any reason why you can’t cook the pasta first and add in the peas and asparagus for the last few minutes of cooking time? That is the way I normally do it but am wondering now if there is a reason to do it this way.

  6. Yummy :) Combo of asparagus and snap peas sounds good. May toss in some cherry tomatoes. And I’ll need to veganize it, replacing Parmesan with nutritional yeast, Daiya cheese and/or Toffuti cream cheese!

  7. My asparagus and peas are up but not ready to pick. I can’t wait for the fresh garden vegetables to try this recipe. I wonder if a few fresh basil leaves to garnish would be a nice addition?

    I advocate the brief cooking of fresh pea pods, shelled peas, snow peas, green beans, carrots, cauliflower, broccoli, asparagus, corn kernels straight off the cob or from a frozen bag, zucchini and all summer squash.
