			<content:encoded><![CDATA[<p>This is definitely one of those &#8220;not measured&#8221; recipes. Next time I mix some up I&#8217;ll try to pay attention to proportions for those of you that like to start with a known thing. But I use basically the same mix of ingredients for any leftover meat: turkey, chicken, roast beef, etc.</p>
<p>Chopped turkey or chicken<br />
mayonnaise to taste<br />
chopped dill pickles to taste<br />
a bit of chopped onion (optional)<br />
chopped celery if you like a lot of crunch (optional)<br />
salt and pepper to taste</p>
<p>Mix it all up and spread on the bread of your choice. Top with some leftover cranberry relish or jelly if you like.</p>
