Tortilla Soup

Ingredients:

1 ½ pounds ground beef cooked and drained
2 cans (14 ½ oz each) Mexican-style stewed tomatoes, chopped
2 cans (4 oz each) diced green chilies
3 stalks celery, chopped
2 cans (15 oz each) black beans
1 cup frozen corn kernels
Water

Directions:

1. Place ground beef, tomatoes, chilies, celery, beans and frozen corn in a slow cooker or large pot. Add water to achieve desired soup consistency

2. Simmer all day on low in slow cooker or for 30 minutes on the stovetop

3. Serve garnished with tortilla chips, olives, cheese and sour cream.

Makes 6 to 8 servings.
